Caramalised Onions:
½ tsp Vegetable oil
2 Red onions – peeled and thinly sliced
2 Tbsp Balsamic vinegar
1 tsp Caraway seeds
1 Tbsp Brown sugar
1 Tsp Tamari or Soy Sauce
Salt & Pepper to taste
METHOD
- Heat oil in small saucepan
- Add onions, vinegar, caraway seeds, sugar and tamari
- Stir well, cover and reduce heat
- Cook for 15 minutes
- Remove cover and cook for a further 10 – 15 minutes
- Stir frequently
- Add salt and pepper to taste
Mushrooms:
6 large mushrooms
Salt & Pepper
Fresh thyme to garnish
METHOD
- Heat the oven to 180c
- Trim any big stalks off, wipe backs with paper towel
- Arrange on a baking dish
- Sprinkle with salt & pepper
- Cover with foil
- Bake in oven until tender – approximately 10 minutes
- Remove from oven and cool slightly
- Arrange upside down on a platter and spoon a generous amount of caramelised onion into each mushroom
- Sprinkle a few thyme leaves on top
