Caramalised Onions on Oven Baked Mushrooms 

Caramalised Onions:
½ tsp Vegetable oil
2 Red onions – peeled and thinly sliced
2 Tbsp Balsamic vinegar
1 tsp Caraway seeds
1 Tbsp Brown sugar
1 Tsp Tamari or Soy Sauce
Salt & Pepper to taste

METHOD
 

  • Heat oil in small saucepan
  • Add onions, vinegar, caraway seeds, sugar and tamari
  • Stir well, cover and reduce heat
  • Cook for 15 minutes
  • Remove cover and cook for a further 10 – 15 minutes
  • Stir frequently
  • Add salt and pepper to taste

Mushrooms:
6 large mushrooms
Salt & Pepper
Fresh thyme to garnish

METHOD

  • Heat the oven to 180c
  • Trim any big stalks off, wipe backs with paper towel
  • Arrange on a baking dish
  • Sprinkle with salt & pepper
  • Cover with foil
  • Bake in oven until tender – approximately 10 minutes
  • Remove from oven and cool slightly
  • Arrange upside down on a platter and spoon a generous amount of caramelised onion into each mushroom
  • Sprinkle a few thyme leaves on top
