Broccoli Salad with Yoghurt Wasabi Dressing

Makes 2 Cups

1 head of broccoli
1 cup low fat unsweetened plain yoghurt
¼ tsp Wasabi paste
½ tsp brown sugar
¼ tsp salt
2 Tbsp fresh coriander – chopped

METHOD

• Slice broccoli into florets
• Peel the stalk and slice into matchstick size pieces
• Blanch in boiling salted water and refresh under cold running water. Stalks should be just tender and broccoli head green
• Mix yoghurt, wasabi paste, sugar and salt well
• Toss through broccoli and coriander
