Nam Jhim Dressing

1 chilli – deseeded and sliced
2 shallots – peeled and chopped
2 roots of coriander – washed and roughly chopped
1 clove garlic
1 ½ tbsp brown sugar
¼ cup lime juice
2 tbsp fish sauce
METHOD

  • You will need a pestle & mortar or small food processor (pounding in pestle & mortar gives best results) Be careful with chilli that it does not splash. Wash hands carefully
  • Pound or blend the chilli, shallots, coriander root and garlic
  • Add sugar and pound again then using stirring motion add the lime juice and fish sauce and mix well
  • Drain and toss through your favourite, lightly steamed vegetables
