Asian Eggplant
1 Large eggplant
1 Tbsp fresh coriander
Sauce
1 Tbsp soy sauce
1 tsp rice wine vinegar
¼ tsp brown sugar
1 tsp lime juice
1 tsp ginger juice – grate ginger onto paper towel, carefully gather up sides then squeeze to juice
METHOD
• Cut eggplant into 2cm dice
• Steam until tender
• Combine the sauce ingredients
• Add eggplant to the sauce while still hot and stir through
• Scatter chopped coriander over the top before serving
