Asian Green Bean and Bok Choy

Makes 4 cups

Can be served hot or cold

500g round green beans
1 bunch bok choy
½ cup fresh coriander
Dressing

2 Tbsp. soy sauce
1 tsp fish sauce
Juice of 1 fresh lime
1 Tbsp. caster sugar
1-2 tsp. finely sliced red chilli

METHOD

  • Trim beans and cut in half
  • Blanch in boiling water for 1 min then refresh under cold water
  • Trim white stalk off bok choy then chop into bite size pieces. Place in sieve and pour boiling water over to wilt
  • Refresh under cold water
  • Roughly chop coriander leaves
  • Mix dressing together dissolving sugar.
  • Toss through vegetables
