Asparagus and Dill Salad

Makes 2 cups

1 bunch asparagus

FOR DRESSING

1 heaped Tbsp wholegrain mustard
3 Tbsp chopped dill leaves
1 Tbsp white balsamic condiment
Zest and juice of half a lemon
Salt & pepper

METHOD

• Wash asparagus, snap woody ends off, cut into diagonal pieces
• Blanch in boiling salted water – refresh under cold tap
• Mix all the dressing ingredients together
• Toss through the asparagus, making sure the dill leaves are mixed through
