1 bunch asparagus
1 orange – 2 Tbsp of juice and 1 Tbsp of zest
1 tsp seeded mustard
1 Tbsp light honey mustard dressing
Salt & pepper to season
Optional: chopped herbs e.g. dill or Italian parsley
METHOD
- Snap ends off asparagus and cut into smaller pieces
- Steam over high heat for 2 minutes until just tender and still bright green
- Mix dressing ingredients, salt and pepper and pour over asparagus
- Mix through and garnish with herbs if you wish
