Broccoli & Brussels Sprouts with Nam Jhim Dressing

1 cup broccoli
1 cup brussels sprouts (halved)
½ cup coriander leaves

FOR THE NAM JHIM DRESSING

1 chilli – deseeded and sliced
2 shallots – peeled and chopped
2 roots of coriander – washed and roughly chopped
1 clove garlic
1 ½ Tbsp brown sugar
¼ cup lime juice
2 Tbsp fish sauce

METHOD

• To make the dressing you will need a pestle & mortar or small food processor; pounding in pestle & mortar gives best results. Be careful with chilli that it does not splash. Wash hands carefully
• Pound or blend the chilli, shallots, coriander root and garlic
• Add sugar and pound again then using stirring motion add the lime juice and fish sauce and mix well
• Drop broccoli and brussels sprouts into boiling salted water
• Simmer until just tender
• Drain and toss with sauce and coriander
