Broccoli, Cauliflower and Caper Salad
300g cauliflower florets
200g broccoli florets
3 spring onions – finely sliced
Sauce
4 Tbsp honey mustard dressing
2 Tbsp low fat yoghurt (unsweetened)
2 Tbsp chopped capers
Salt & pepper to taste
Mix ingredients together
METHOD
• Blanch cauliflower florets for 1 – 2 minutes
• Blanch broccoli florets for 1 – 2 minutes
• Run vegetables under cold water when blanched to stop cooking process
• Put vegetables into a large bowl
• Pour over sauce
• Toss well
