Broccoli, Cherry Tomato and Basil Salad
1 head of broccoli
1 pack of cherry tomatoes
1 bunch of basil
2 spring onions
¼ cup low calorie balsamic dressing
Salt and ground pepper
1Tbsp wholegrain mustard
1 tsp orange zest
METHOD
• Cut broccoli into small bite size florets.
• Cut the cherry tomatoes in half
• Blanch broccoli in boiling water for 2 minutes
• Refresh under cold water
• Thinly slice the spring onions
• Chop the basil
• Combine all ingredients with mustard, low calorie balsamic dressing and orange zest.
• Season to taste
