300g Brussels sprouts – trim and cut in 1/2
Handful of flat leaf parsley or mint – chopped
Sauce
½ cup plain unsweetened yoghurt
4 tsp horseradish sauce
Salt & pepper to taste
Mix sauce ingredients together
METHOD
- Steam brussel sprouts until tender. Drain well
- Toss dressing through brussel sprouts to coat well
- Just before serving sprinkle over parsley or mint
- Serve hot or cold
