Cauliflower & Pomegranate Tabouli
200g cauliflower
2 Lebanese cucumbers cut into small pieces
3 Spring onions – sliced finely
1 Tbsp chopped mint
1 Tbsp chopped flat-leaf parsley
1 Tbsp pomegranate
Dressing
1 Tbsp lime and chilli dressing
1 tsp lemon juice
1 tsp lemon zest
Salt and pepper
METHOD
• Using a grater or a food processor finely chop the cauliflower until it resembles rice
• Add cucumber and spring onions and herbs
• Toss through dressing
• Sprinkle pomegranate on top
