Cauliflower & Peppers with Ginger Sauce

300g cauliflower florets
½ red pepper – deseeded and chopped
¼ cup chopped coriander

2 tbsp rice vinegar
2 tbsp light soya sauce
1 tsp sweet chilli sauce
1 tsp brown sugar
1 tsp finely grated ginger
1 tsp cornflour
1 tbsp water


  • Steam cauliflower until just tender
  • Steam the pepper pieces for 30 seconds
  • Remove the vegetables and place in a serving bowl
  • Add coriander leavesSauce
  • Put ingredients into a small pot and bring to the boil
  • Make a paste with cornflour and water
  • Thicken sauce, boil gently
  • Pour this over vegetables and mix well
  • Serve warm
