Cauliflower Soup

Cauliflower Soup

½ tsp olive oil
1 Onion – chopped
1 Clove garlic – crushed
½ tsp turmeric
1 Head of cauliflower – cut into small florets
2 Cups chicken or vegetable stock
Salt and pepper


• Heat oil and add onion and garlic
• Cover and sweat over a low heat for about 5-10 minutes (you don’t want them to colour)
• Add the turmeric and stir to combine
• Toss through cauliflower and cook for about 5 minutes
• Add stock and season
• Cover and simmer for around 20-30 minutes until cauliflower is tender
• Use a stick blender to blend until smooth and season with salt and pepper
• Top with chopped chives and serve
