Cauliflower with Caramelised Onions

 Cauliflower with Caramalised Onions

200 gm Cauliflower florets
Topping
½ tsp Olive Oil
1 tsp Cumin Seeds
2 Onions – cut in half then thinly slice
½ tsp Rosemary Leaves
1 tsp Brown Sugar
1 tsp Balsamic Vinegar
Salt and Pepper
1 Tbsp Water
1 Tbsp Paul Newman’s Light Balsamic Dressing

METHOD

  • Blanch cauliflower in boiling salted water until just tender, drain
  • Warm a heavy bottom pan
  • Add oil and cumin seeds – toss around
  • Add onions – cook for 1 minute on medium heat – careful not to brown too much
  • Add rosemary, sugar & balsamic vinegar
  • Add a pinch of salt and a few grinds of black pepper
  • Cook for 15 – 20 minutes until very soft and caramelised
  • Add water and Paul Newman’s dressing
  • Heat through
  • Pour dressing over cauliflower and serve warm
