200 gm Cauliflower florets
Topping
½ tsp Olive Oil
1 tsp Cumin Seeds
2 Onions – cut in half then thinly slice
½ tsp Rosemary Leaves
1 tsp Brown Sugar
1 tsp Balsamic Vinegar
Salt and Pepper
1 Tbsp Water
1 Tbsp Paul Newman’s Light Balsamic Dressing
METHOD
- Blanch cauliflower in boiling salted water until just tender, drain
- Warm a heavy bottom pan
- Add oil and cumin seeds – toss around
- Add onions – cook for 1 minute on medium heat – careful not to brown too much
- Add rosemary, sugar & balsamic vinegar
- Add a pinch of salt and a few grinds of black pepper
- Cook for 15 – 20 minutes until very soft and caramelised
- Add water and Paul Newman’s dressing
- Heat through
- Pour dressing over cauliflower and serve warm
