Makes 2 cups
6 celery stalks – trim – use nice inside stalks
Parsley or coriander to garnish
For the dressing:
2 tbsp chinese rice wine
2 tsp soy sauce
1 tbsp soft brown sugar
1 tbsp clear rice vinegar or sushi vinegar
1 tbsp grated or finely chopped ginger
METHOD
- Cut celery in thin slices and blanch in boiling water for 1 -2 minutes
- Refresh under cold water and dry thoroughly on paper towel
- Arrange celery on serving dish
- Combine dressing ingredients together
- Blend well and pour over celery just before serving
- Garnish with chopped fresh coriander or parsley
