Celery Salad

Celery Salad

Makes 2 cups

6 celery stalks – trim – use nice inside stalks
Parsley or coriander to garnish
 
For the dressing:
2 tbsp chinese rice wine
2 tsp soy sauce
1 tbsp soft brown sugar
1 tbsp clear rice vinegar or sushi vinegar
1 tbsp grated or finely chopped ginger

METHOD

  • Cut celery in thin slices and blanch in boiling water for 1 -2 minutes
  • Refresh under cold water and dry thoroughly on paper towel
  • Arrange celery on serving dish
  • Combine dressing ingredients together
  • Blend well and pour over celery just before serving
  • Garnish with chopped fresh coriander or parsley
