STUFFED CHERRY TOMATOES
1 punnet cherry tomatoes
1 small container cottage cheese
1 tbsp finely chopped chives
1 tbsp sliced basil leaves
1 tsp grain mustard
Salt & pepper
METHOD
- Cut tops off tomato, scoop out flesh
- Mix cottage cheese, herbs, mustard and seasoning together
- Fill each tomato with mixture
AUBERGINE PUREE STUFFED CUCUMBER
1 Aubergine
1 clove of Garlic
Squeeze of Lemon juice
Handful Thyme Leaves
1 tsp chopped capers
Salt & Pepper
1 Telegraph Cucumber
METHOD
- Heat the oven to 180ยบ
- Put aubergine into oven to bake for 30 minutes
- When cool enough to handle scoop out flesh into blender
- Add crushed garlic, squeeze lemon juice, thyme leaves, chopped capers, and salt & pepper
- Blend well
- Peel and cut telegraph cucumber in half lengthways
- Scoop out seeds from middle with a teaspoon
- When aubergine puree is cool fill cucumber along the centre
- Cut into bit size slices
- Arrange on plate and sprinkle cucumber with extra thyme leaves
