1 Punnet cherry tomatoes
3 Courgettes
1 Small red onion
Handful basil leaves
Toothpicks
METHOD
• Cut cherry tomatoes in half (if small leave whole)
• Slice courgettes and cut onion into chunks
• Thread onto toothpicks e.g. tomato, slice courgette, small slice red onion, then finish with tomato
• Bake in oven 180º for 10 minutes – don’t allow tomatoes to become too soft
• When serving place a basil left on each kebab
2. MARINATED BUTTON MUSHROOMS
1 Punnet button mushrooms
3 Tbsp Paul Newman’s light balsamic dressing
2 Tbsp Chives
METHOD
• Trim stalks off mushrooms then cut into quarters
• Combine with dressing and herbs
• Season, then allow to marinate for ½ hour before serving
