INGREDIENTS
1 Cos lettuce
1 Telegraph cucumber, sliced into ribbons with a vegetable peeler
1 Stalk celery, thinly sliced into strings
1 Bunch mint
Vinaigrette of choice e.g. Thai style or lime and coriander
METHOD
• Shred cos lettuce
• Layer with cucumber ribbons
• Top with celery and herbs
• Lightly drizzle with vinaigrette
