Courgette, Mushroom and Pepper Bake

2 Courgettes – thinly slice lengthways
1 cup Tomato Pasta Sauce
2 Peppers (orange or red) – slice into narrow strips
2 large Flat Mushrooms – slice into narrow strips
½ tsp Dried Thyme or 1 Tbsp Fresh Thyme
Grind of Black Pepper

METHOD

  • Oven on 180º
  • Start layering vegetables with courgette strips
  • ¼ cup of pasta sauce
  • Layer of pepper strips
  • ¼ cup of pasta sauce
  • Layer of mushrooms
  • Finish with ½ cup of pasta sauce
  • Sprinkle with thyme
  • Grind of Black Pepper
  • Bake in oven 30 – 35 minutes until vegetables are tender
  • Serve warm
