2 Courgettes – thinly slice lengthways
1 cup Tomato Pasta Sauce
2 Peppers (orange or red) – slice into narrow strips
2 large Flat Mushrooms – slice into narrow strips
½ tsp Dried Thyme or 1 Tbsp Fresh Thyme
Grind of Black Pepper
METHOD
- Oven on 180º
- Start layering vegetables with courgette strips
- ¼ cup of pasta sauce
- Layer of pepper strips
- ¼ cup of pasta sauce
- Layer of mushrooms
- Finish with ½ cup of pasta sauce
- Sprinkle with thyme
- Grind of Black Pepper
- Bake in oven 30 – 35 minutes until vegetables are tender
- Serve warm
