Cucumber Chilli Pickle

1 telegraph cucumber
1 tsp sea salt
1 tsp sugar
1 tsp rice vinegar
½ tsp grated garlic
½ tsp red chillil
1 tsp grated ginger
1 Tbsp chopped parsley

METHOD

  • Cut ends off cucumber, cut into 4 pieces and discard seeds
  • Smash cucumber pieces with back of a large knife
  • Put in bowl and toss through the sugar and salt
  • Set aside in fridge for ½ hour
  • Strain then add the vinegar, garlic, chilli and ginger
  • Sit for about ½ hour then sprinkle with parsley before serving
