Cumin and Balsamic Roasted Onions with Rocket Salad

½ tsp Olive Oil
12 Baby Onions – peeled and cut into quarters
2 Tbsp. Balsamic Vinegar
Salt & Pepper to season – Iodized flaked sea salt is good to use for this
1 tsp Cumin seeds
1 bag Rocket Leaves
1 Tbsp. Light Balsamic Dressing

METHOD

  • Pre heat oven to 190º
  • Put oil into a shallow roasting pan
  • Add onions, 1 Tbsp balsamic vinegar, salt and pepper. Mix together well
  • Sprinkle cumin seeds on top of the onions
  • Bake for 25 – 30 minutes until onions are brown and soft
  • Remove from oven and drizzle remaining tablespoon of balsamic vinegar over the onions. Allow to cool
  • Put prepared rocket leaves into bowl and toss well with dressing
  • Add onions and serve at room temperature
