Fatoush Salad

Makes 4 Cups

¼ red onion thinly sliced
½ telegraph cucumber
3 radishes cut into matchsticks
2 vine tomatoes cut into wedges
1 Cos lettuce cut into small chunks
¼ cup chopped mint
2 Tbsp  Balsamic Vinegar dressing

METHOD

• Cut red onion into thin slices and soak in cold water for 10 minutes
• Cut cucumber in half, take out the seeds with a spoon and then slice thinly
• Place all of the above ingredients into a salad bowl
• Toss through Balsamic Vinegar dressing and serve
