Makes 6 cups
½ green cabbage
1 carrot
1 Tbsp fresh root ginger
1 small red onion
1 bunch of mint
2 Tbsp honey & mustard lite dressing
Salt & pepper to taste
METHOD
- Shred the cabbage finely
- Grate the carrot
- Grate the ginger
- Finely slice the red onion
- Finely slice the mint
- Toss all ingredients together with the dressing
- Season with salt & pepper to taste
