Ginger Coleslaw

Makes 6 cups
½ green cabbage
1 carrot
1 Tbsp fresh root ginger
1 small red onion
1 bunch of mint
2 Tbsp honey & mustard lite dressing
Salt & pepper to taste

METHOD

  • Shred the cabbage finely
  • Grate the carrot
  • Grate the ginger
  • Finely slice the red onion
  • Finely slice the mint
  • Toss all ingredients together with the dressing
  • Season with salt & pepper to taste
