Greek Style Courgettes
½ tsp olive oil
100g shallots or baby onions
1 tsp coriander seeds
300g courgettes
Salt and pepper to season
¼ Cup chopped oregano leaves
Sauce
¼ Cup white wine
¼ Cup tomato juice
1 Tbsp tomato paste
1 Tbsp fresh thyme leaves or 1 tsp dried
Mix in a small bowl together
METHOD
- Cut shallots in half
- Cut courgettes into rounds
- Heat oil in a heavy bottomed pot, add shallots and coriander seeds
- Sauté gently for 2 minutes
- Add courgettes and sauce
- Stir well, season
- Cover and cook for 10 minutes on a gentle simmer
- When cooked add oregano
- Serve warm
