Greek Style Courgettes

Greek Style Courgettes

Makes 4 cups

½ tsp olive oil
100g shallots or baby onions
1 tsp coriander seeds
300g courgettes
Salt and pepper to season
¼ Cup chopped oregano leaves

Sauce
¼ Cup white wine
¼ Cup tomato juice
1 Tbsp tomato paste
1 Tbsp fresh thyme leaves or 1 tsp dried
Mix in a small bowl together

METHOD

  • Cut shallots in half
  • Cut courgettes into rounds
  • Heat oil in a heavy bottomed pot, add shallots and coriander seeds
  • Sauté gently for 2 minutes
  • Add courgettes and sauce
  • Stir well, season
  • Cover and cook for 10 minutes on a gentle simmer
  • When cooked add oregano
  • Serve warm
