Green Pepper, Cucumber and Celery with Mint and Caper Dressing
1 Green Pepper
½ Telegraph Cucumber
1 Celery stick
¼ cup chopped Mint leaves
1 tsp Capers
1 Tbsp Light Honey & Mustard dressing
Salt and Pepper to taste
METHOD
- Cut green pepper in half, deseed, remove membrane and slice thinly
- Cut telegraph cucumber in half and scoop seeds out with a teaspoon
- Peel skin off telegraph cucumber, leaving some green strips
- Finely chop celery and cucumber
- Combine all ingredients and mix well
