Makes 4 Cups
2 cups sugar snap peas
½ small red cabbage – shredded finely
2 oranges – segmented
1 Tbsp chopped mint
1 Tbsp orange juice
2 Tbsp low calorie Balsamic dressing
METHOD
- Blanch peas, rinse under cold water.
- Combine peas, cabbage, orange segments and mint in bowl
- Toss with low calorie dressing and orange juice
