Mushrooms with Lemon and Mustard

½ tsp Olive Oil
1 Onion – cut in half then thinly sliced
2 – 3 Cloves of Crushed Garlic
1/3 cup White Wine
2 teaspoons Dijon Mustard
250 gms Flat Mushrooms – wiped clean and sliced
½ tsp Lemon Zest
½ tsp Lemon Juice
Salt & Pepper to taste
½ cup chopped Italian Parsley (flat leaf parsley)

METHOD

  • Heat oil in pan
  • Add onion and garlic, sauté gently until onions are soft
  • Add wine, mustard, mushrooms, lemon zest and juice
  • Stir, cover with a lid and leave about 2 minutes for mushrooms to cook
  • Season with salt & pepper and stir
  • Heat 30 seconds more, then add parsley
