Nam Jhim with Vegetable Medley

1 Cup cauliflower florets
1 Cup Brussels sprouts (quartered)
1/2 Cup green beans – sliced
1/2/ Cup coriander leaves
Dressing:
1 Chilli – deseeded and sliced
2 Shallots – peeled and chopped
2 Roots of coriander – washed and roughly chopped
1 Clove garlic
1 1/2 Tbsp brown sugar
1/4 Cup lime juice
2 Tbsp Fish sauce
Method:
  • To made the dressing you will need a pestle and mortar or small food processor; pounding in pestle and mortar gives best results.  Be careful with chilli that it does not splash.   Wash hands carefully
  • Pound or blend the chilli, shallots, coriander root and garlic
  • Add sugar and pound again then using stirring motion add the lime juice and fish sauce and mix well
  • Drop the cauliflower and Brussels sprouts into boiling salted water
  • Simmer until just tender
  • Add beans simmer very quickly – keep green
  • Drain and toss with the sauce and coriander
