Radish, Bean and Snow Pea Salad
250 gm of Green Round Beans – trimmed and sliced diagonally
2 – 3 Radishes – sliced thinly
2 Spring Onions – sliced thinly & diagonally
50 gm of Snow Pea Sprouts – trim to suit
1 bunch of Coriander – chopped
1 – 2 Tbsp Lite Balsamic Dressing
Salt and Pepper
METHOD
- Blanch beans in boiling water for 30 seconds
- Refresh under cold water
- Mix all ingredients together
- Season to taste
