Red Pepper and Cherry Tomato Soup
½ tsp olive oil
1 red onion chopped
2 cloves of garlic – crushed
½ glass jar red capsicum in brine
1 tin cherry tomatoes in juice
1 tsp brown sugar
1 tsp balsamic vinegar
½ tsp salt
1 cup good chicken stock
Ground pepper to taste
Pinch of smoked paprika – optional
2 sprigs of fresh thyme
Handful of fresh basil leaves
METHOD
• Sauté onion and garlic in olive oil
• Add all other ingredients
• Simmer for ½ hour
• Cool slightly then blend – careful to take out thyme sprigs before blending
• 1 handful of fresh basil leaves can be added to blender at the end
