Ribbon Salad with Orange Dressing

1 Medium courgette
1 Medium cucumber – slice in half and scoop out seeds
2 cups of baby spinach
1 Orange – cut into segments

Dressing
1 Tbsp. finely chopped spring onion
1 Tbsp. mint
1 Tbsp. orange juice
2 Tbsp. light balsamic dressing

METHOD

  • Using a vegetable peeler, peel the courgette and cucumber into ribbons
  • Toss vegetables together
  • Top with orange segments
  • Drizzle with dressing
