Roasted Tomato, Pepper and Rocket Salad
1 Punnet of cherry tomatoes
1 Red Capsicum
1 Yellow Capsicum
½ Bag of rocket
½ Bag of baby spinach leaves
½ Cup basil leaves chopped
Dressing
1 Tbsp Light Feta and Garlic dressing
1 tsp lemon juice
METHOD
- Preheat over to 150c
- Cut tomatoes in half and place cut side up in oven proof tray
- Wrap capsicum in tin foil
- Bake for 20 mins
- When cool, remove capsicum from tin foil, peel off skin, deseed and cut into strips
- Put all vegetables and basil in a large bowl and toss through dressing
