Roasted Tomato, Pepper and Rocket Salad

1 Punnet of cherry tomatoes
1 Red Capsicum
1 Yellow Capsicum
½ Bag of rocket
½ Bag of baby spinach leaves
½ Cup basil leaves chopped
Dressing
1 Tbsp Light Feta and Garlic dressing
1 tsp lemon juice
METHOD

• Preheat over to 150c
• Cut tomatoes in half and place cut side up in oven proof tray
• Wrap capsicum in tin foil
• Bake for 20 mins
• When cool, remove capsicum from tin foil, peel off skin, deseed and cut into strips
• Put all vegetables and basil in a large bowl and toss through dressing
