Sauteed Brussels Sprouts with Chipotle Sauce

250g Brussels sprouts
½ tsp Olive oil
1 tsp Minced garlic
2 Spring onions finely sliced
½ Tbsp Barkers chipotle sauce
1 tsp Fresh flat leaf parsley
Salt and pepper


• Trim ends off brussels sprouts and discard any tough outer leaves
• Cut finely (or shred with mandolin)
• Using your hands fluff up brussels sprouts to separate leaves
• Heat oil over medium heat and add garlic and spring onions
• Stir for 30 seconds
• Add brussels sprouts and saute until crisp tender – about 5 minutes
• Remove from heat and stir through chipotle sauce and parsley
• Season with salt and pepper
