1 Medium onion, chopped
2 Cloves garlic, crushed
4 Stalks celery, chopped
4 Cups mixed greens (spinach, leeks, silverbeet, broccoli, cauliflower etc)
400mls Chicken stock – homemade or bought
400mls Water
¼ Cup parsley
¼ tsp Nutmeg
METHOD
- Spray a heavy based saucepan with olive oil spray
- Add onion, garlic and celery
- Cover and sweat over a low heat for 10 minutes
- Add the green vegetables, stock and water
- Bring to the boil and simmer uncovered for 15 minutes
- Add parsley and nutmeg
- Season to taste with salt and pepper
