<\/a><\/span><\/strong><\/div>\n1 Red onion \u2013 roughly diced
\n2 Cloves of garlic, chopped
\n1 tsp Olive Oil
\n1 Eggplant, cut into cubes
\n3 Courgettes, cut into cubes
\n1 Green pepper, roughly chopped
\n1 Yellow pepper, roughly chopped
\n2 Tbsp fresh basil, chopped
\n3 Large tomatoes, roughly diced
\nSalt and pepper to taste<\/p>\n
METHOD<\/u><\/strong><\/p>\n\n- Saut\u00e9 onions and garlic in olive oil until soft<\/li>\n
- Add the eggplant to pan<\/li>\n
- Add \u00bc cup of water and cook the eggplant for a further 5 minutes, stirring occasionally<\/li>\n
- Add the courgette, peppers and basil<\/li>\n
- Put lid on and cook for another 5 minutes, stirring occasionally<\/li>\n
- Before serving add the diced tomatoes, salt and pepper and stir through over heat for a couple of minutes until tomatoes soften.<\/li>\n
