Asparagus Salad with Basil Gremolata<\/strong><\/span><\/div>\n

1 Bunch asparagus\"\"<\/a>
\n1 Cup cherry tomatoes \u2013 cut in half
\n1 Tbsp light balsamic dressing
\nSalt and pepper to taste<\/p>\n

Gremolata:<\/p>\n

1 Tbsp fresh basil, finely chopped
\n1 Tbsp fresh parsley, finely chopped
\n\u00bd Tbsp lemon zest
\n1 Garlic grated garlic clove<\/p>\n

METHOD<\/p>\n

\u2022 Wash asparagus, snap woody ends off
\n\u2022 Blanch in boiling salted water \u2013 refresh under cold tap and pat dry with paper towel
\n\u2022 Place asparagus on serving platter and top with tomatoes
\n\u2022 Drizzle with dressing and sprinkle gremolata on top
