Eggplant, Green Pepper and Tomatoes with Yoghurt Dressing<\/strong><\/span><\/div>\n

1 Large eggplant or 4 smaller Asian eggplants\"\"<\/a>
\n\u00bd tsp olive oil
\n1 Large onion \u2013 finely sliced
\n2 Cloves garlic \u2013 crushed
\n1 Green pepper \u2013 deseeded and chopped
\n3 Medium tomatoes \u2013 skinned, cored and diced
\n\u00bd tsp Salt and freshly ground pepper to taste<\/p>\n

Yoghurt Dressing
\n\u00bd cup of Low fat unsweetened plain yoghurt
\n1 Clove of garlic \u2013 crushed
\n1 \u2013 2 Tbsp of finely chopped mint
\nSalt to taste
\nMix together in a bowl<\/p>\n

METHOD<\/p>\n

\u2022 Slice and cut large eggplant into cubes. If using Asian eggplants slice into rounds
\n\u2022 Put eggplant into a steamer basket and steam until tender
\n\u2022 In a medium sized pot heat oil and add onions, garlic and green pepper
\n\u2022 Cover with a lid and simmer gently until tender
\n\u2022 Add a little water if too dry
\n\u2022 Stir in tomatoes, salt and pepper
\n\u2022 Carefully stir through eggplant trying not to break up too much
\n\u2022 Cover and heat through for 2 minutes
\n\u2022 Allow to stand covered for 5 minutes
\n\u2022 Put onto serving plate and cover with yoghurt dressing<\/p>\n","protected":false},"excerpt":{"rendered":"
