Eggplant & Mushrooms in a Caper & Mustard Sauce\"\"<\/a><\/strong><\/span><\/div>\n

Makes 2 cups<\/p>\n

\u00bd eggplant \u2013 cut into \u00bd lengthways then slice
\n\u00bd tsp vegetable oil
\n\u00bd onion finely chopped
\n6 large flat mushrooms \u2013 sliced
\n1 bunch thyme = 2 Tbsp of leaves
\nSalt & pepper to taste<\/p>\n

SAUCE<\/p>\n

\u00bc cup white wine
\n1 Tbsp chopped capers
\n1 tsp Dijon mustard
\n1 tsp whole grain mustard
\nJuice of \u00bd lemon
\n1 tsp cornflour<\/p>\n

Mix together in a small bowl<\/p>\n

METHOD<\/p>\n

\u2022 Steam eggplant over double boiler until tender
\n\u2022 In heavy bottom pan heat oil and saut\u00e9 onions for 1 minute
\n\u2022 Add sliced mushrooms, cook for another minute
\n\u2022 Add sauce mixture and cook until thickened
\n\u2022 Add eggplant stir to cover all the vegetables with sauce
\n\u2022 Sprinkle over thyme leaves
\n\u2022 Salt & pepper to taste
