Nam Jhim with Vegetable Medley<\/span><\/strong><\/h3>\n
<\/div>\n
1 Cup cauliflower florets<\/div>\n
1 Cup Brussels sprouts (quartered)<\/div>\n
1\/2 Cup green beans – sliced<\/div>\n
1\/2\/ Cup coriander leaves<\/div>\n
<\/div>\n
Dressing:<\/strong><\/div>\n
1 Chilli – deseeded and sliced<\/div>\n
2 Shallots – peeled and chopped<\/div>\n
2 Roots of coriander – washed and roughly chopped<\/div>\n
1 Clove garlic<\/div>\n
1 1\/2 Tbsp brown sugar<\/div>\n
1\/4 Cup lime juice<\/div>\n
2 Tbsp Fish sauce<\/div>\n
<\/div>\n
Method:<\/strong><\/div>\n
    \n
  • To made the dressing you will need a pestle and mortar or small food processor; pounding in pestle and mortar gives best results.\u00a0 Be careful with chilli that it does not splash.\u00a0\u00a0 Wash hands carefully<\/li>\n
  • Pound or blend the chilli, shallots, coriander root and garlic<\/li>\n
  • Add sugar and pound again then using stirring motion add the lime juice and fish sauce and mix well<\/li>\n
  • Drop the cauliflower and Brussels sprouts into boiling salted water<\/li>\n
  • Simmer until just tender<\/li>\n
  • Add beans simmer very quickly – keep green<\/li>\n
  • Drain and toss with the sauce and coriander<\/li>\n<\/ul>\n
