\n\u00bd Red capsicum \u2013 thinly sliced
\n\u00bd Yellow capsicum \u2013 thinly sliced
\n\u00bd Green capsicum \u2013 thinly sliced
\n\u00bd Fennel bulb \u2013 thinly sliced
\nSalt and pepper<\/p>\n
Pickling liquid<\/u>
\n1\/2 Cup white wine vinegar
\n1 bay leaf
\n1 tsp brown sugar
\n1 red chilli thinly sliced
\n1 tsp grain mustard
\n1 Tbsp capers<\/p>\n
METHOD<\/u><\/strong><\/p>\n\n- Put sliced vegetables into boiling water for 1 minute until softened a little<\/li>\n
- Drain, cool then press through sieve to remove as much moisture as possible<\/li>\n
- Reserve in a glass bowl<\/li>\n
- Add vinegar, bay leaf, sugar, chilli and capers to a saucepan and bring to boil<\/li>\n
- Pour over vegetables straight away<\/li>\n
- Season with salt and pepper<\/li>\n
