250g Green beans – cut into smaller pieces
1 Telegraph cucumber – cut into chunks
1 Yellow pepper – cut into chunks
Dressing
½ Cup plain unsweetened yoghurt
1 Tbsp mango chutney
1 tsp curry powder
Salt and pepper to taste
METHOD
- Mix the dressing ingredients together
- Blanch beans in salted boiling water for 1 minute until just tender and still green – refresh under cold water
- Add the pepper and cucumber and toss through the dressing
- Season to taste
