Minted Green Coleslaw
¼ cabbage
3 spring onions
½ green pepper
1 stick of celery
1 cup fresh mint
½ cup fresh parsley
Lite honey and mustard dressing
Salt and pepper
METHOD
- Finely slice the cabbage, spring onions, green pepper and celery.
- Chop mint and parsley
- Toss all ingredients together, add dressing and salt and pepper to taste.
