Makes 2 cups
1 telegraph cucumber – quartered, seeded and diced
½ Cup whole mild peppadew, drained
1 cup coriander – roughly torn
DRESSING
1 tsp sweet chilli sauce
1 Tbsp rice wine vinegar
½ tsp fish sauce
1 tsp finely chopped ginger
METHOD
- Combine dressing ingredients together
- Toss through cucumber, peppadew and coriander leaves
