Makes 6 cups
3 tomatoes
1 red or yellow pepper
1 cucumber – deseeded
1 bunch of coriander
1 red onion
1 tsp sweet chilli sauce
2 tbsp balsamic dressing
METHOD
- Chop Red onion finely and soak in cold water for 10 minutes
- Chop all other ingredients into chunky pieces
- Mix together sauces and toss through salad
