Broccoli with Mushrooms and Oyster sauce
- 1 head of broccoli
- ½ tsp olive oil
- 2 cloves of garlic – crushed
- small knob of ginger – finely chopped
- 2 large flat mushrooms – cut into slices
- 2 spring onions – sliced
- Sauce
- 1 tbsp oyster sauce
- 1 tbsp sweet chilli sauce
- 1 tbsp sherry
- 1 tbsp water and tsp cornflour (make a paste)
Mix all ingredients together
METHOD
- Cut broccoli into lengths and blanch until stalks are tender
- Heat oil in heavy bottomed pan
- Add garlic, ginger and mushrooms
- Sauté until mushrooms just start to wilt
- Add sauce, broccoli and spring onions
- Toss around to cover green vegetables with sauce
- Serve warm
