Coleslaw with Mint & Yoghurt Dressing

Makes 4 Cups

¼ cabbage
3 spring onions
½ green pepper
1 stick of celery
1 cup fresh mint
½ cup fresh parsley

Dressing
250mls Unsweetened low fat yoghurt
Zest of lime
2Tbsp lime juice
Salt and pepper to taste
METHOD

  • Finely slice the cabbage, spring onions, green pepper and celery.
  • Chop mint and parsley
  • Toss all ingredients together
  • Whisk together the dressing ingredients and season to taste
  • Pour dressing over the vegetables and toss well to coat
