Green Beans with Coriander and Caper Dressing
DRESSING
1 Tbsp Dijon Mustard
1 ½ Tbsp Lemon Juice
1 tsp White Balsamic Vinegar
1 tsp capers – drained
½ cup fresh Coriander leaves – chopped
Salt and pepper
METHOD
- Trim and cut the beans in half
- Blanch in boiling salted water – refresh under cold tap water
- Combine the dressing ingredients in a small bowl and mix well
- Add salt and pepper to taste
- Pour dressing mixture over beans and toss well with the coriander
- May be served warm or cold
