Green Beans with Coriander and Caper Dressing

250 gm Green Beans

DRESSING
1 Tbsp Dijon Mustard
1 ½ Tbsp Lemon Juice
1 tsp White Balsamic Vinegar
1 tsp capers – drained
½ cup fresh Coriander leaves – chopped
Salt and pepper

METHOD

  • Trim and cut the beans in half
  • Blanch in boiling salted water – refresh under cold tap water
  • Combine the dressing ingredients in a small bowl and mix well
  • Add salt and pepper to taste
  • Pour dressing mixture over beans and toss well with the coriander
  • May be served warm or cold
