1 tin (400 gm approx. weight) or glass jar Artichoke Hearts in Brine
DRESSING
1 clove crushed garlic
2 tsp finely chopped oregano
½ tsp each of cumin and coriander seeds
(These can be toasted together and then ground in a coffee and spice grinder or pound in pestle and mortar)
1 Tbsp Light lime vinaigrette
METHOD
- Combine dressing ingredients together mixing well then toss through artichokes
