Grated Cauliflower and Ginger Salad
Makes 4 cups
3 cups of cauliflower, grated
½ red capsicum, finely chopped
1 courgette, finely sliced
¼ cup chopped coriander
¼ cup chopped parsley
Salt and pepper
Dressing
1 Tbsp grated fresh ginger
2 Tbsp light honey and mustard dressing
1 Tbsp Thai chilli sauce
Mix dressing ingredients together
METHOD
- Put grated cauliflower into a large bowl
- Add chopped vegetables, coriander and parsley
- Pour dressing over salad and toss well to coat ingredients
- Season to taste
