Grated Cauliflower and Ginger Salad

Makes 4 cups

3 cups of cauliflower, grated
½ red capsicum, finely chopped
1 courgette, finely sliced
¼ cup chopped coriander
¼ cup chopped parsley
Salt and pepper

1 Tbsp grated fresh ginger
2 Tbsp light honey and mustard dressing
1 Tbsp Thai chilli sauce

Mix dressing ingredients together

  • Put grated cauliflower into a large bowl
  • Add chopped vegetables, coriander and parsley
  • Pour dressing over salad and toss well to coat ingredients
  • Season to taste
